Chai Recipe

“Cha brings me back to my childhood and it warms me up inside”

Ingredients

  • Water (2 parts)
  • 2 or 3 black tea bags (Tea India, Wash Bakri brand, any orange pekoe tea).
  • 2 % or full fat Milk (1 part)
  • Spices (Use a mortar or spice grinder for crushing spices)
    • 4 to 5 pieces of cardamom
    • 4 to 5 cloves
    • 1 teaspoon green fennel seeds
    • 1 teaspoon ajwain seeds
    • 1 cinnamon stick or 1 teaspoon ground cinnamon
    • 1 teaspoon fresh gingerroot or ground ginger
  • Sweetner: sugar, honey or Jaggery (gur). Sweeten as preferred.

Instructions

  • Add water, spice, tea bags and sweetner to a saucepan
  • Cover pan and bring to a boil, then lower heat to simmer
  • Add milk and bring to a boil, once foam like consistency has formed, turn off and remove from heat (tea colour should appear deep pink tannish brown colour)
  • Add a pinch of cha masala and pinch of cinnamon to taste
  • Let tea rest for about 5 mins
  • Strain and serve
