Chai Recipe
“Cha brings me back to my childhood and it warms me up inside”
Ingredients
- Water (2 parts)
- 2 or 3 black tea bags (Tea India, Wash Bakri brand, any orange pekoe tea).
- 2 % or full fat Milk (1 part)
- Spices (Use a mortar or spice grinder for crushing spices)
- 4 to 5 pieces of cardamom
- 4 to 5 cloves
- 1 teaspoon green fennel seeds
- 1 teaspoon ajwain seeds
- 1 cinnamon stick or 1 teaspoon ground cinnamon
- 1 teaspoon fresh gingerroot or ground ginger
- Sweetner: sugar, honey or Jaggery (gur). Sweeten as preferred.
Instructions
- Add water, spice, tea bags and sweetner to a saucepan
- Cover pan and bring to a boil, then lower heat to simmer
- Add milk and bring to a boil, once foam like consistency has formed, turn off and remove from heat (tea colour should appear deep pink tannish brown colour)
- Add a pinch of cha masala and pinch of cinnamon to taste
- Let tea rest for about 5 mins
- Strain and serve
